Classic Lamb Shank and Vegetable Stew

Serves 4 · 2 hours 30 minutes

This tender, warming stew brings back memories of Sunday dinners and fills the house with the most wonderful aromas.

4 lamb shanks, 2 tbsp plain flour, 2 tbsp olive oil, 1 large onion, diced, 3 carrots, chopped, 3 potatoes, cubed, 2 cups beef stock, 1 cup red wine, 2 tsp fresh rosemary, Salt and pepper to taste

Method

1. Dust lamb shanks with flour and brown in oil in a large heavy-based pot.

2. Add onion and cook until softened, then add vegetables and herbs.

3. Pour in stock and wine, bring to boil then reduce heat to low.

4. Cover and simmer for 2 hours until meat falls off the bone.

5. Season to taste and serve with crusty bread or mashed potato.

6. Allow to rest for 10 minutes before serving for best flavour.
